Black Bean Quesadillas

Josephine, Marcus, Cheikh, Cienneh, Brianna, Shawna and Brittany--members of Neelsville's Young Chefs cooking club--worked together to prepare a tasty, healthful snack, black bean quesadillas.
We mashed the hot beans and mixed in prepared salsa, then spread it on whole wheat tortillas that had been lightly painted with vegetable oil.
A sprinkling of shredded mozarella cheese topped the beans, followed by another tortilla. We heated the quesadillas on a griddle until the tortillas were lightly brown and crisp, and the cheese melted.
Even people who don't like beans liked our quesadillas!
