The Salad Bar

Cardinal Ritter High School has been working on adding a salad bar to the school's lunch system. As of now, there is an iceberg side salad as our only option. Our group also took a survey of our entire school to see what toppings people wanted with the salad bar, and how many days a week people would plan on buying from the salad bar. Out of all the responses, we found that 74% of the faculty and students would purchase a salad three to four days per school week. Also, instead of using just iceberg lettuce, the salad will be a combination of 70% romaine lettuce and 30% iceberg lettuce. There will also be a spinach option. We have done all the research on the board of health requirements. The money for the salad bar is coming from the lunch room budget and from the parent club. Our group is also coordinataing with the health classes to get calorie counts for many of the lunch entrees and for the salad bar. Lastly, this salad bar is not included in the free and reduced lunches as of right now, but we plan to have it included in the future.
