World's Best Roasted Veggies

Have you ever thought that some vegetables were disgusting? Like broccoli, for instance? Or maybe ALL vegetables? Well, think again!
If you mix a vegetable you think you hate with other flavors (and do some magic - see below), it could turn out that it's your new favorite dish. We tried this -- and, believe it or not, it worked!
Here's what we did:
First, we looked through some recipes and found one that sounded like it might work for people who like vegetables. We normally didn't enjoy broccoli and peppers (okay: we hated them!), but we thought this recipe might change our minds.
We started with some washed broccoli florets (those are the tops) and garlic.
We mixed everything in a big bowl, then drizzled on some olive oil, and sprinkled on some salt and pepper. Then we mixed it all again.
The next step was to put everything on a baking sheet, put it in a preheated oven at 425°F and roast the veggies for about 25 minutes.
Here's where the magic happened! The heat of roasting makes the vegetables sweeter by bringing out their natural sugars. This is called caramelization.
When we took the roasted vegetables out of the oven, we sprinkled some grated Parmesan cheese on the top and let it melt. Then we served them to our family and friends.
We thought it would taste okay, but not great. It turned out that we were wrong. When we put the veggies in our mouths, our taste buds exploded! It was amazing!
Lauren usually HATES broccoli and peppers, but after tasting this dish, her perspective changed. She had three servings of these vegetables. So did Sarah!
Try making this recipe at home, and we assure you that you will blown away when you taste it. You'll LOVE it so much, you'll want to eat it every day!
